Diploma in Culinary Management (BHMS)

Course Objective
This 1 year program introduces students to the world of food production through basic operation techniques and hands-on core competency training. It focuses on how to handle kitchen utensils and equipments, the making of bread and pastry, cold kitchen, plate preparation & presentation, food safety and nutrition, kitchen accounting.

At Diploma level, a student can work independently and can take charge for particular dishes and menu items.

Duration (12 months)

6 months of Day-class Institutional Studies

  1. Theory (lectures and tutorials) and practical lessons at  Oriton School  Monday to Friday (7 hours per day), 9am to 4pm

  2. 3 months of Internship Preparatory Training practical lessons at Oriton Café

6 months of Industrial Attachment

  • Subject to academic performance, interview by employer and approval from Ministry of Manpower

Examinations
Thrice a year; March, June and November

Course intakes:
February, April, June, August, October, December

Entry Requirements

  1. International Applicants –
    • Completed at least high school or other equivalent qualifications
  2. Local Applicants –
    • At least 4 N or 2 O levels with a pass in English and Maths or other equivalent qualifications.

Progress Path:

Students can proceed on to pursue an Advanced Diploma in Culinary Management with BHMS in Switzerland which is a one year program. It attempts to familiarize students with various recipes and specific regional international cuisines. It focuses interpersonal and business communication skills, budgeting, menu design and pricing, concept development, marketing and entrepreneurship. European culture, service management, food service law and professional ethics round up the theoretical part of the program.

BHMS Advanced Diploma in Culinary Management is articulated by the University of Brighton, UK for graduates to complete their BA (Hons) in Culinary Arts Degree either in one year full-time study or in two years work-based top-up Award.

The Culinary Management Diploma offered at Oriton School is accredited by the BHMS.

In Switzerland, BHMS chef instructors have the academic as well as the managerial expertise to inspire students who are planning a global career in Culinary Management.

Upon completion of the Diploma in Culinary Management, students will also receive the BHMS Diploma in Culinary Management certificate.
